Veg Hakka Noodles

  1. In a pan, add 4 cups water on medium flame. Once it boils, add 250g noodles. Also add 1 tsp cooking oil (this is to prevent the noodles from sticking) and a pinch of salt.

  2. After 5-7 minutes, check if the noodles are cooked (smash one and check).

  3. Strain the noodles in a colander and run under cold water. Now smear the noodles with a little oil and keep aside.

  4. In a wok, add 3 tsp cooking oil on high flame. Once hot, add 1 cup of fine julienne veggies (capsicum, red and yellow bell peppers, carrot and cabbage)

  5. Saute for 4-5 minutes. The veggies should not be too cooked and should be crunchy.

  6. Now add salt to taste, 2 tsp soy sauce, 2 tsp tomato ketchup, 1 tsp vinegar and 1/2 tsp black pepper powder.

  7. Add the boiled noodles and mix well. Switch off flame.

Serve hot!
