Poori Bhaji


Veg Kadhai Stir Fry

1. In a kadhai, add 1 tbsp cooking oil. Once hot, add 1 tsp cumin seeds (jeera) and a pinch of asafoetida.

2. Now add 1 cup mix veggies (cauliflower, carrot, capsicum, bell peppers, potato). Also add 100g diced paneer.

3. Also add salt to to taste, 1 tsp each of coriander powder, red chilli powder, garam masala, amchur powder and crushed kasoori methi.

4. Mix well. Add a little water. Cover with a lid and cook on medium flame for 5-7 minutes.

5. Open the lid and add 1 tsp oil. Stir fry and cook for another 10 minutes.

6. Switch off flame and garnish with finely chopped coriander leaves.

Serve hot with pooris!


Poori

  1. Take 1 cup wheat flour in a bowl. Add a pinch of salt, 2 tsp cooking oil and mix.

  2. Now add water in little quantities and knead the dough to a firm consistency. Knead for 5-7 minutes to get a smooth dough. It should be firmer than a chapati dough.

  3. Smear with oil and rest for half hour.

  4. In a frying pan, add 1/2 litre groundnut oil and heat on medium flame.

  5. Pinch a small portion of the dough and roll out into a poori.

  6. Once the oil is smoking hot, add the poori and gently press with a ladle to puff it up.

  7. Turn the poori and cook on both sides till it has light brown spots.

Serve hot!
